Healthy bowl of goodness: Tasty soup with combination of vegetables and lentils

Soup is a great nutritious meal option: The secret behind making a healthy yet tasty soup is to include a rainbow of vegetables and lentils to please the soul. With Ayurvedic influences, this soup is a big healthy hug in a bowl, and unlike most things in life, its recipe is a real keeper. The recipe is so easy to put together, it’ll stun you and your guests with its enigmatic flavors.

Ingredients

Oil-1 tbsp.

Garlic- 1 tsp chopped

Onion- 1 small chopped

Tomato- 1 small chopped

Curry leaves- 8-10 nos.

Carrots/beans/potatoes/peas/capsicum etc of your choice- 1 cup cut into small pieces

Toor dal- ¼ cup soaked for 20 mins in water.

Salt and pepper to taste

Garam masala powder-1/4 tsp

Coconut milk- 1 cup

Water/veg stock- 3-4 cups

Chopped coriander- 2 tbsp.

Turmeric powder-1/2 tsp

For garnish- boiled rice/ fried onions/seeds/nuts etc as desired can be used.

Method

1. Prepare all the ingredients for the recipe.

2 Heat oil add in the curry leaves, onions, garlic, and saute for 10 seconds, add in the veggies, tomatoes, dal, salt, spices, water and allow to simmer for 20 mins, check if cooked.

3. Blend the soup into a puree, bring it back to boil, simmer and add coconut milk and stir well.

4. Check for salt and adjust texture as needed, serve hot garnished as per options.

Chef’s Variations

Try making the same soup by using chicken stock or add boiled chopped chicken pieces into it before serving. Can also add vegetables like zucchini, broccoli, Bottlegourd Add leaves like basil, mint, dill for more flavours.
